In a previous Blog, I profiled one of the global blackcurrant industry’s most respected researchers, Prof Mark Willems, of the University of Chichester in the United Kingdom.

Although most of Prof Willems work has focussed on blackcurrants and exercise physiology his latest published work looks at NZ Blackcurrant powder and support for healthy Blood sugar balance. This research has just been published in Functional Foods in Health and Disease 2017: 7 (7): 483-493.

The research used our Sujon Blackcurrant powder. The paper says that “regular intake of the powder may support healthy blood sugar balance in health individuals and recommends that “future work should examine the effects of regular intake of New Zealand blackcurrant.

In a future column, I’ll explain what conditions cause fruits and vegetables grown in New Zealand (especially blackcurrants grown in the South Canterbury and Motueka Nelson areas) to have a unique polyphenolic profile that may offer a range of significant human health values if included in the diet.

It is important for me to stress the following when I refer to research:

  • Research can be indicative of possible values to humans but most current research requires significant more trials before values are proven.
  • While research is being carried out people should simply enjoy blackcurrants as part of a balanced diet of many foods; especially fruits and vegetables.
  •  Our Sujon Blackcurrant powder is simply whole blackcurrants freeze dried, seeds removed, and then milled to a beautiful richly coloured powder. No additives!
  • No-one should use the above information in any way to treat themselves without discussing first with their medical professional.

White layer:

2 cups desiccated coconut

1/2 cup coconut butter (melted)

¼ cup coconut cream

2 tsp vanilla

2 tablespoons maple syrup or honey

Pinch of salt

Purple Layer:

2 cups desiccated coconut

1/2 cup coconut butter (melted)

1/2 cup coconut cream

2 tablespoons Sujon Blackcurrant powder

2 tsp vanilla

2 tablespoons maple syrup or honey

Pinch of salt

Desiccated coconut for sprinkling on top

 Method:

For the white layer: In a blender whiz the coconut until it becomes a fine powder, you may have to stop and scrap down the sides and whiz again. Add the rest of the ingredients and blend until all combined.

Place the mixture into about an 8 inch slice tin lined with baking paper. Press down with the base of a cup (or something with a flat surface) to ensure it is firm and even into the tin. Set it aside in the freezer while you make the purple layer.

For the purple layer: Use the same directions as above just adding the purple layer ingredients (more coconut cream and Sujon’s Black currant powder).

Take the white layer out of the freezer and press the purple layer evenly over the top. Let it set in the freezer about 20-30 minutes and then take it out, cutting it into even squares. Keep it in an airtight container in the fridge.

Makes: approx 12-14 pieces, depending how big you want them!

Preparation: 30-35min

Setting time: 20-30min

2 tablespoons Sujon Blackcurrant powder

¾ cup Orange or apple juice

Fruit toppings –  Sujon’s blueberries and a kiwifruit!

Coconut flakes (add as a topping for an extra crunch!)

Chia seeds – for added topping

Method:

Blend the Sujon Blackcurrant powder and juice in a blender until smooth

Quinoa Breakfast

Cooked Quinoa with blueberries, almonds and spices. The perfect start to your chilly winter morning.

  • 1/4 cup quinoa (makes 1 cup cooked)
  • 1  cup milk (can be non-dairy)
  • 1 cup water
  • 1/2 tsp ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/2 tsp citrus zest
  • A pinch of sea salt
  • 1/2 cup frozen berry mix (My current fav is raspberries & blueberries, but whatever you have will work) &/or 1 tspn Sujon Blackcurrant Powder
  • 2 Tbsp of your fav nuts or seeds
  • Dash of sweetener such as Maple Syrup or honey

Put quinoa, milk and water in pot and bring to boil; then turn down to simmer and add spices, vanilla extract and citrus zest. Cook until quinoa is soft. Throw frozen berries in for a few minutes to soften.

Sweeten to taste and sprinkle over pumpkin seeds.

Phil Hyatt challenges everyone to try the Gibb diet.

“About 6 months ago John Gibb tried to encourage me to include in my day-to-day diet, some blackcurrants. My answer was a bit dismissive and yes I love blackcurrants, believe in their goodness and often have a Blackcurrant drink etc but did nothing.  I had a similar lecture from John about three weeks ago so decided to give this chosen fruit of ours a go. I started having a small quantity of blackcurrants with my weet-bix in the morning, just a small handful.

After about three days Raewyn enquired if I was feeling any effect from my new diet, I did the usual dismissive answer but later in the day I thought I am feeling good today. That was two weeks ago and since then..

“I haven’t had so much energy for a long time, I feel great, am motivated more then ever”.

This is just the best cheesecake recipe!

Gluten Free Version: To make this recipe gluten free, it’s simple – just make sure to buy gluten free biscuits. If you like ginger, I’ve tried the gluten free ginger nuts and they taste great in the cheesecake.

TIP: If you want to be uber organized and make this in advance, you can freeze the cheesecake by wrapping in a double layer of glad wrap and a layer of foil – it will freeze for up to 4 weeks.

White Chocolate and Raspberry Cheesecake

Ingredients

  • 200g chocolate biscuit crumbs
  • 50g butter, melted
  • 360 grams cream cheese
  • 2 tsp grated lemon rind
  • 10 g gelatine powder/granules dissolved in 50 ml boiling water, cooled
  • 250 g white chocolate, melted
  • 200 ml Double cream, lightly whipped (best is ‘Lewis Road’ it’s organic- so no additive & stocked at most supermarkets)
  • 150 g frozen *raspberries (do not defrost)
  • 200 g fresh *raspberries
  • icing sugar, to dust
  • 1/2 cup berry jam melted with 2 tbsp boiling water

* You can use any of your favourite berries here. For example, strawberries work great as well.

Directions

  1. Combine the biscuit crumbs and butter and press into the base of a greased 20 cm spring form tin.
  2. Beat the cream cheese and lemon rind using an electric mixer until smooth. Stir in the gelatine mixture and chocolate until smooth, then fold in the cream and frozen raspberries.
  3. Pour the filling on to the prepared crumb base and refrigerate for 3 hours or until set. Just before eating, decorate with raspberries, pour some of the melted jam over and dust with icing sugar.

Nerves & excitement all round at the start of the Nelson Women's Golf Classic 2016

We are ready for action!

We had a fantastic weekend of golf with great weather reflecting in some good scores.

With 68 players in the field on Saturday and 45 on Sunday there was a good spirit about with everyone having a good time and everything going to plan.

The Sujon Boysenberry juice in the Wendy House at the 15th went down a treat. It was light and refreshing in the hot conditions and just the tonic to calm their nerves and excitement at the chance of winning a car if they holed in one.

It was nice to experience their excitement, but unfortunately, no one holed in one.

The Sujon Frozen berries in the novelty hole prizes were well received, with ladies keen to use them when they got home for a dessert or even make their own juice.
